Food is a complex matrix of chemical reactions and interactions that will provide a structure that identifies each type of product. Adding, removing or replacing ingredients is more complicated than it looks due to the effects on the food matrix. This course will highlight the different processes used in the food industry to elaborate and modify food. Besides, you will learn how different ingredients interact and react within each other to create physical and chemical properties that affect the sensory perception of your food.VSC2203
